In this article, we will share how we choose products for our Georgian restaurant, RadioCafe. We aim to provide our guests with only the freshest and highest quality ingredients. Learn about the standards we adhere to and how we select our suppliers so you can be confident in the quality and freshness of our offerings.

Direct Cooperation with Farmers

After a thorough selection process, we found a licensed farm with which we now collaborate directly. They supply us with quality greens and vegetables for our dishes. This ensures that every dish uses only natural, fresh ingredients comparable to those from home.

This partnership allows us to maintain a high standard of quality and taste at RadioCafe, offering you dishes made from the best products. We are proud of our cooperation with these farmers and are confident you will notice the difference in the quality and flavor of our dishes.

Cooperation with Farmers

Exclusive Cheese Production for Our Restaurant

Cheese is a source of pride for us at RadioCafe. We work with a small farm that specializes in producing cheese specifically for us, as we need a lot of cheese for khachapuri. Approximately 70% of cheese in the Georgian market is powdered cheese made from dry milk.

However, we use only high-quality, natural cheese. When you cut into khachapuri, the cheese literally oozes milk, showcasing its freshness, tenderness, and richness. To find our cheese supplier, we had to work with over 20 other producers before finding the one we continue to work with today.

Product Quality Control

At RadioCafe, we place special emphasis on product quality control. We have two employees dedicated to this task. Mikhail goes to the market five times a week at 6 AM to select the freshest products. Our staff member Nino is responsible for receiving and checking the quality of all deliveries. If the products do not meet our standards, they are immediately discarded.

We conduct daily checks on all vegetables and fruits to ensure their freshness and quality. We also adhere to international HACCP standards (HACCP is a set of rules for organizing production activities based on 7 principles, guaranteeing a quality and safe product for the consumer) to ensure the safety and high quality of all dishes we serve to our guests.

Product Quality Control

Supporting Local Wine Companies

At RadioCafe, we support local wine companies by collaborating with six Georgian wineries. All of them are small private enterprises: four are small wineries, and two are larger ones. We carefully select wines for our menu by organizing tastings in which the entire staff participates.

This approach allows us to offer our guests unique and high-quality wines. Thanks to this method, we can guarantee that every Georgian wine in our café has a distinctive taste and meets high standards of quality.
